Mushroom Chilli-con-Carne

I made this whilst getting ready for work. To prep took the same time as boiling my egg ie. 5 mins and then I allowed 25 mins of slow cooking whilst I had my shower. Basically I am labouring the point that this is super quick and easy.
I’ve used exactly the same ingredients for beef chilli so that you can have two pots on the go at the same time. Simples…

Ingredients:
• 1 tbsp cold-pressed rape seed oil
• 1 onion (finely chopped)
• 1 garlic clove (finely chopped) or 1 tsp garlic powder
• 1 fresh chilli (finely chopped) or 1 tsp chilli powder
• Punnet (approx. 300g) of mushrooms (roughly chopped)
• 300g red beans (I used aduki beans)
• 1 tin chopped tomatoes
• 1 veg stock cube
• 1 tbsp mixed herbs
• 1 tsp paprika
• 1 tbsp balsamic vinegar
• 1 tbsp Worcester sauce
• Water depending on dryness
• Salt for seasoning

To make:
1. Place oil in pan on medium heat
2. Mix in onion, garlic and chilli. stirring for 2 mins
3. Add in mushrooms and aduki beans allowing them to sweat for about 5 mins
4. Stir in tomatoes, stock cube, herbs, paprika, worcester sauce and balsamic vinegar
5. Add in more water if there is too little sauce. I added around 200ml
6. Cover and simmer on medium-low heat for approx. 25 mins
7. Taste test and add salt if required.

Serve with:
Quinoa, chopped fresh coriander, greek yoghurt and mixed salad.

Ingredients:

• 1 garlic clove (finely chopped) or 1 tsp garlic powder
• 1 fresh chilli (finely chopped) or 1 tsp chilli powder
• 500g minced beef (preferably grass-fed)
• 300g red beans (I used aduki beans)
• 1 tin chopped tomatoes
• 1 veg stock cube
• 1 tbsp mixed herbs
• 1 tsp paprika
• 1 tbsp balsamic vinegar
• 1 tbsp Worcester sauce
• Water depending on dryness
• Salt for seasoning
